Speed is a big reason. Using a micron gauge will tell you a lot about the system, like moisture or leaks present, etc.
When I first started, I was taught to evacuate for an hour, or over lunch break. I found out what a micron gauge was on my own time, and told my employer at the time that I wanted a micron gauge and nitro. He got the stuff for me, because I explained why I needed it, and that it would make our installs and service better.
I applaud you taking your own time to research and ask questions on stuff like this. This kind of attitude is what makes a good tech great, wanting to understand why.

    It's more than speed.

    It's ability as well.

"Ability" to actually hit the target micron level.

Pulling through a manifold, I struggle to hit 1000 microns.

What Daryl_Dixon said. You can get much deeper. With this set upicanreach 250 microns.

That reminds me of two very competitive friends who were out for a walk, and stopped on a bridge to take their relief.

When finished, the first remarked, "that water sure was cold."

    The other said, "yes."

    "And it was deep, too."
